I am awoken every night at about 2am because that is when Crosby, my dog, like so many of us, wakes up for his midnight snack. His little collar tag clanks against the side of his bowl as he ravenously devours whatever was left over from dinner time. In fact, I noticed that he had started saving more and more of his dinner for his private night time ritual. I don't think dogs are gifted with foresight, but I'm pretty sure crosby knows what he is doing when he leaves a little extra kibble in his bowl every night. In my mind, this is Crosby's special time. His "me time" if you will.
What does this have to do with cookies? Well. Cookies are pretty much the most perfect and irresistible midnight snack. And if I have to wake up every night to the sound of clanking and chomping, I might as well eat a few cookies. And those cookies might as well have peanut butter, chocolate chunks and chocolate covered pretzels in them.
Peanut Butter Chocolate Pretzel Cookies!
1/2 Cup Butter
1/2 Cup Peanut Butter
1/2 Cup Brown Sugar
1/2 Cup Granulated Sugar
1 tsp. Vanilla Extract
1 tsp. Salt (less if you aren't that into the salty/sweet thing)
1 1/3 Cups All Purpose Flour
1/2 tsp. Baking Soda
1/2 tsp. Baking Powder
1 Cup Chocolate Chunks
1 Heaping Cup Chopped chocolate Covered Pretzels
Extra Chocolate Covered Pretzels to press on top of each cookie (Optional)
Preheat oven to 350.
Combine the flour, baking soda and baking powder in a bowl and set aside.
Cream the butter and sugars together until light but not too fluffy. Add the peanut butter, vanilla and salt. Once that is evenly combined, add the eggs, one at a time and beat until the mixture is creamy, even and smooth.
Add the flour mixture and mix until combined. Add the chocolate and pretzel pieces.
Scoop heaping tablespoons of dough onto a parchment lined sheet tray and press the whole chocolate covered pretzels onto the top of each cookie.
Bake for 12-15 minutes until the edges start to turn golden brown.
